客家人的冬季进补习惯反复体现小雪的温馨融合

。小雪是农历二十四节气中的一段时期,这一时期天气逐渐变冷,北方大部分地区开始降雪。然而,在广大的客家地区依然是一片生机盎然,唐人张登的《小雪日戏题绝句》中,“甲子徒推小雪天,刺梧犹绿槿花然”正是描述了这一现象。

在古籍《月令七十二候集解》中,对小雪即有记载:“十月中,雨下而为寒气所薄,故凝而为雪。小者未盛之辞。”表明这是反映天气现象的节令。此时还未出现严寒天气,所以初雪落到地面是半冰半融状态,有时也会雨雪同降,是这一节气中最明显的气象学特征之一。

民间谚语有云:“冬吃萝卜夏吃姜”、“十月萝卜赛人参”,确实有一定的道理。白萝卜作为冬季的时令蔬菜,其营养丰富,有抗氧化作用;它还能诱导产生干扰素,对预防反复感染有一定的疗效。而清代大才子、美食家袁枚在其著作《随园食单》中记载了多种白萝卜煮食方法,如与鱼翅或鸡胸脯肉等做菜,或以酱腌制生食,或以猪油炒熟虾米煨透而食等。
